To prepare Vermicelli Upma for 2–3 servings, you will need:
Vermicelli (semiya) – 1 cup (roasted), Water – 2 cups, Mixed vegetables (carrots, peas, beans) – 1 cup, finely chopped, Onion – 1 medium, finely chopped, Green chilies – 2, slit, Ginger – 1 tsp, grated, Curry leaves – 6–8, Mustard seeds – 1 tsp, Urad dal (split black gram) – 1 tsp, Chana dal (Bengal gram) – 1 tsp, Cashews or peanuts – 2 tbsp (optional), Oil – 2 tbsp, Salt – to taste, Lemon juice – 1 tsp (optional), Fresh coriander leaves – for garnish.
1. Roast the Vermicelli: If your vermicelli is not pre-roasted, dry roast it in a pan until it turns light golden and aromatic. Set aside.
2. Prepare the Tempering: Heat oil in a pan. Add mustard seeds and let them splutter. Add urad dal, chana dal, and cashews or peanuts. Sauté until golden.
3. Add Aromatics: Add curry leaves, green chilies, and grated ginger. Stir for a few seconds, then add chopped onions. Sauté until onions turn translucent.
4. Cook the Vegetables: Add the mixed vegetables and sauté for 2–3 minutes. Add a pinch of salt to speed up cooking.
5. Boil the Water: Pour 2 cups of water into the pan. Add salt and bring the mixture to a boil.
6. Add Vermicelli: Gradually add the roasted vermicelli, stirring continuously to prevent clumping. Lower the heat to medium.
7. Cook Until Done: Cover the pan with a lid and let the vermicelli cook for 5–7 minutes, or until the water is absorbed and the vermicelli is soft.
8. Finish with Lemon Juice: Add a dash of lemon juice for a tangy flavor.
9. Garnish and Serve: Garnish with fresh coriander leaves and serve hot.
